2013 Le Marognole Valpolicella Ripasso Superiore DOC

  • Corsi estate grown Corvina, Corvinone, Rondinella, Molinara and Croatina grapes are handpicked, gently placed in wooden racks, and dried for approximately one month prior to crush. After an initial classic fermentation, Fabio introduces the “must” to the pomace from Amarone for a second fermentation. This ancient method produces “Ripasso”, a full-bodied, “appassimento” wine with exceptional color, complexity, and soft, refined tannins.

    A perfect complement to ripe cheeses, grilled meats and roast.

    Perfectly served at 64-65 F.

    Varietals: Corvina & Corvinone (60%), Rondinella (30%), Croatina (7%), Molinara (3%)
    Aging: 18 months, half in new French Oak and half in second and third pass “barriques”.
    Alcohol: 14.5%
    Cellar Potential: 10-15 years
